A FAMILY FRIEND CALLED ME YESTERDAY TO ASK FOR THIS RECIPE. WE DON'T MISSED SERVING THIS DISH AT ANY OCCASION AND HAS BECOME AND ALWAYS WILL BE OUR SIGNATURE DISH. OUR FRIENDS, NEAR AND FAR HAVE LEARNED TO ACCEPT THE SIGHT AND THE TASTE AND EVEN CRAVED FOR MORE..AS MY VERSION VARIES.

HERE'S ONE VERSION FROM ME, SIMPLE AND EASY TO PREPARE. FOLLOW THROUGH....made by Shud, and she's not from where we came from ! l Salute her!!!

1 BOWL OF FISH FILLET( FROM SELECTED FISH ONLY, eg; TENGGIRI, PELALING, KEMBONG, YU)

-DEBONED FISH AND TAKE FLESH ONLY(AND SHARE THE HEAD AND BONES WITH YOUR CATS, IF YOU HAVE ONE) ,CUT INTO THIN STRIPES
-WASH STRIPES AND DRAINED THOROUGHLY (LESS WATER IN STRIPES WILL GIVE BEST TASTES OR BETTER WASH FILLET BEFORE STRIPES)
- SQUEEZE ABOUT 5 LIMAU NIPIS INTO BOWL OF STRIPES (BOWL AS BIG AS INSTANT MAGGI BOWL)
-ADD IN SALT AND AJI-NO-MOTO/ 1 TEA SPOON  OF SUGAR (TASTES BETTER WITH AJI), MIX WELL
-PUT INSIDE FRIDGE
-CUT ABOUT 25 CILI API (CILI API KAMPUNG) INTO VERY SMALL PIECES AND MIX WITH MARINATED FISH (AS YOU GO ALONG, YOU WILL NEED TO TAKE OUT MARINATED FISH TO MIX WITH OTHER   
  INGREDIENTS)
-CUT ABOUT 5 BIG BANGLA ONIONS INTO THIN RINGS AND MIX AGAIN WITH MARINATED FISH (SEE I TOLD YOU, FISH IS TAKEN OUT AGAIN TO MIX)
-CHOP ABOUT 5 PETALS GARLICS FINELY AND MIX AGAIN WITH MARINATED FISH.
-SLICE GINGER (AS BIG AS YOUR THUMB, IF U HAVE SMALL THUMB THEN FIND SOMEONE ELSE WHO HAS A MUCH JUICY AND FAT ONE)  INTO STRIPES, MIX AGAIN WITH THE MARINATED FISH
-TAKE ABOUT 5 STALKS OF DAUN KETUMBAR AND CHOPPED FINELY AND MIX WITH MARINATED FISH AGAIN!

TAKE NOTE, AFTER MIXING ALL THESE, TASTE WHETHER FISH CUKUP MASAM. IT SHOULD TASTE SOUR AND EXTRA HOT. NOW IS THE TIME YOU SHOULD ADD SALT AND 1 TABLE SPOON OF LIME JUICE TO YOUR TASTE AND DON'T FORGET YOUR CHILLI. PUAS HATI ? PUT THAT BOWL OF UMEI INSIDE FRIDGE BEFORE SERVING. THE FISH FLESH SHOULD LOOK DULL AFTER MARINATED WITH SQUEEZED LIME AND LIME JUICE. IT MEANS ITS READY TO EAT. IF YOU ARE HAVING FOR LUNCH, BEST TO MARINATE OVERNIGHT FOR BETTER RESULT.
